As a chef, I choose wines that naturally match my style of
cooking, and like new dishes on the menu, all the wines are tasted before
they make it onto the list, often with food rather then alone, since that
is the context in which they will be enjoyed in the restaurant.
The (award
winning) wine list at Ransome's Dock has certainly grown and evolved
over the last eleven years, and yet the guiding principles behind it remain
the same: to discover individual wines that are the best examples of their
region, grape variety or wine style, and to offer these wines at affordable
prices. In other words, a list of wines for drinking and enjoying with other
people, not simply a chequebook wine list designed to impress guide book
inspectors!
